I came across the term ‘Third Wave Coffee’ and it puts the resurgence of coffee in perspective for me.
Third Wave Coffee – and the Third Wave Coffee Movement – describes modern artisan speciality coffee. Specialty coffee is traceable to individual farms, and is more seasonal. These types of coffee’s are a fresher, seasonal crop, which are then also freshly roasted, and brewed fresh. They are produced, harvested, and ideally also roasted and prepared, more carefully and baristas aim to showcase the natural flavour characteristics of these coffees.
Increasingly, people are demanding to know exactly where the food they consume came from and it’s effect on the Environment. There is now a bigger focus on ethical farming and sustainability. And there is a greater demand for garden-to-table consumption and artisan food. The Third Wave Coffee taps into these needs.
